Researchers at Southern Illinois University Edwardsville are harvesting carrots from a rooftop garden as part of an experiment by the SIUE Department of Biological Sciences. The sweet-tasting vegetables are being grown in special mesh tubes with three different compost mixtures. Along with being used for research, they provide fresh produce for those eating at Fixins Restaurant on campus.
Writer Teri Maddox detailed the rooftop garden experiment Thursday in the Belleville News Democrat.
